Castor CDMS allows a PI to sign each visit, form, and repeating data instance.

Often times, it is only required that the PI signs the participant once a subject is discharged from a study. If the latter is the case, it is an option to add an "End of Study" visit to your study. Here you can collect the reason for the subject's discharge (discontinued, completed, etc) and opt to have the PI only sign this visit as an indication that the participant is signed.
